Roast Chicken and Vegetables

This roast chicken and vegetables recipe is a hearty and comforting meal perfect for a cozy dinner. The combination of juicy roasted chicken with flavorful herbs and tender vegetables makes it a family favorite.

Ingredients:

  • 1 whole chicken about 4-5 pounds

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 4 large carrots, peeled and chopped

  • 4 potatoes, chopped into chunks

  • 1 onion, sliced

Instructions:

Preheat oven to 425F 220C


In a small bowl, mix together olive oil, salt, pepper, thyme, rosemary, garlic powder, and paprika to create a spice rub


Place the chicken in a roasting pan and rub the spice mixture all over the chicken, including under the skin


Arrange chopped vegetables around the chicken in the roasting pan


Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken is cooked through and vegetables are tender, basting occasionally with pan juices


Once cooked, remove from the oven and let it rest for 10 minutes before carving


Serve hot with the roasted vegetables

Oven Smoked Pulled Pork with Bacon

The savory goodness of bacon is combined with the rich, smoky flavor of slow-cooked barbecue pork in this recipe for oven-smoked pulled pork. Ideal for a family get-together or weekend barbecue.

Ingredients:

  • 4-5 pounds pork shoulder or butt

  • 1/4 cup kosher salt

  • 1/4 cup brown sugar

  • 2 tablespoons smoked paprika

  • 1 tablespoon black pepper

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 teaspoon cayenne pepper adjust to taste

  • 6-8 slices of bacon

  • Wood chips for smoking applewood or hickory

  • Brioche buns for serving

  • Barbecue sauce optional, for serving

Instructions:

In a bowl, mix together kosher salt, brown sugar, smoked paprika, black pepper, garlic powder, onion powder, and cayenne pepper to create a dry rub


Rub the dry rub mixture generously all over the pork shoulder or butt


Cover and refrigerate for at least 4 hours or overnight for best results


Preheat your oven to 225F 107C


While the oven is preheating, soak the wood chips in water for about 30 minutes


Place the soaked wood chips in a smoker box or create a foil packet with holes to allow smoke to escape


Place the wood chip packet on one side of a baking sheet


Wrap the pork shoulder or butt in bacon slices, securing them with toothpicks if needed


Place the bacon-wrapped pork on a wire rack set over a baking sheet, opposite the wood chips packet


This will allow the pork to smoke and cook indirectly


Insert a meat thermometer into the thickest part of the pork without touching the bone


Place the baking sheet with the pork and wood chips in the preheated oven and roast until the internal temperature of the pork reaches 195F 90C, which may take 6-8 hours depending on the size of the pork


Once the pork reaches the desired temperature, remove it from the oven and let it rest for about 30 minutes


After resting, use two forks to shred the smoked pulled pork


Serve the pulled pork on brioche buns with your favorite barbecue sauce, if desired

Ingredients:

  • 2 1/4 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1 cup unsalted butter, melted

  • 1 cup packed light brown sugar

  • 1/2 cup granulated sugar

  • 1 egg + 1 egg yolk

  • 2 cups semi-sweet chocolate chunks

Instructions:

Warm the oven up to 325F 165C


Clean and grease a 9x13-inch baking pan


Place parchment paper inside the pan


Mix the flour and baking soda together in a bowl


Melt the butter and mix it with the brown sugar and granulated sugar in a different large bowl


The egg and egg yolk should be added to the sugar and butter mixture and mixed until the mixture is smooth


Slowly add the dry flour mixture to the wet mixture while stirring just until everything is combined


Add the chocolate chunks and mix them in


Press down on half of the cookie dough in the baking pan that has been prepared


Put the little marshmallows on top of the dough


Drop spoonfuls of the rest of the cookie dough evenly on top of the marshmallow layer


Heat the oven and put the dish in it


Bake for 25 to 30 minutes, or until the top is golden brown


Let the cookie bars cool all the way in the pan before cutting them into squares
